Pecan-Crusted Turkey Cutlets
Ingredients
1/3 c. gluten free all-purpose flour
1 egg + 2 egg whites
3 Tbs. Gluten-Free-Dijon Mustard
1/2 tsp. cayenne pepper
Coarse salt
2/3 c. Gluten-Free Bread Crumbs
2/3 c. ground pecans
4 (5 oz.) turkey breast cutlets
1/4. Canola oil
Directions
Place gluten free flour in a shallow bowl. In another shallow bowl whisk together egg, egg whites, mustard,
cayenne pepper and salt. In a third shallow bowl, combine gluten free bread crumbs, and pecans. In assembly
line fashion, coat cutlets with flour, then dip in egg mixture, and finally coat with the bread crumb mixture. Place a
sauté pan large enough to accommodate all the cutlets over medium-high heat and add oil. Add the turkey cutlets
and lower the heat to medium. Cook until well-browned on one side, about 4 to 5 minutes. Turn the cutlets over
and cook 2 to 3 minutes more. (Serves: 4)
