Pineapple Chicken

Ingredients
1 1/2 lbs. skinless, boneless chicken breasts
1/2 tsp. Mayacamas Fine Foods Products-Curry Blend
1 red sweet pepper, sliced thin
1 pineapple, peeled, cored and cut into large chunks
1 Serrano pepper, sliced thin
3/4 c. unsweetened coconut milk
1 Tbs. packed brown sugar
2 Tbs. olive oil

Directions
Sprinkle chicken with 1/2 tsp. salt and curry seasoning. Place 1 Tbs. olive oil in a large skillet over high heat.
Add chicken and brown on both sides. Reduce heat to medium-high; cook 12 minutes or until chicken is cooked
through and juices run clear. In a second skillet, cook sweet pepper in 1 Tbs. olive oil over medium-high heat for
3 minutes. Add pineapple, cook 5 minutes or until browned. Add Serrano pepper; cook 1 minute. Stir in
coconut milk and brown sugar; heat through. Serve chicken topped with peppers and sauce. (Serves: 4)
